Application of Biotechnology in the Culturing, Processing and Preservation of Aquatic Products

摘要: 生物技术特别是酶技术已广泛应用于水产品的开发中。本文从水产品养殖、 加工和保鲜三个方面综述了生物技术的应用现状。在水产养殖方面,生物技术主要 用于饲料生产和水质控制方面;在水产品加工方面,可在水产品的组织降解、去异 味、蛋白和功能成分生产及制备风味调味品上有所应用;在水产品保鲜方面,已开 发出多种酶保鲜技术。生物技术的应用将使水产品养殖、加工及保鲜等行业发展更 为迅猛。

Abstract: Biotechnology, especially enzyme engineering technology, has been widely used in the development of aquatic products. This paper reviews on applications of biotechnology in aquaculture, processing and preservation. In aquaculture, biotechnology is mainly used for feed production and water quality control; in aquatic products processing, biotechnology is applied for tissue degradation in aquatic products, odor removal, protein and functional ingredients production and preparation of flavor seasonings; in seafood preservation, a variety of enzymes preservation technology have been developed. The application of biotechnology will enable aquaculture, processing and preservation industries to develop more fast.
